Your definition of sex makes no sense at all. That would make all prepubescent children, post-menopausal women, and testicular cancer survivors "neuter" and neither male nor female. Under your definition, unless gender was completely disconnected from sex (which you said was nonsense), there can be no boys and no girls anymore.
Furthermore, you've again dismissed the intersexed. There are people born with one testicle and one ovary, both of which are functional. What are they? Both male and female? Neuter? What?
You've lost the plot, I'm afraid. Your definition is inconsistent with reality. My definition, however, does make sense. Your genetics determines sex, which is ordinarily evidenced by your genitals. That's how it works. It doesn't matter if you're infertile for whatever reason, or have had an accident or cancer; it's just about the genes. This definition even includes the intersexed, who usually have a nonstandard mix of X and Y chromosomes, and so calling them male or female doesn't really make sense, and neither does neuter, especially since some are fertile. (There are a few intersex conditions that come from other genetic abnormalities, but that's still genetics, so my definition still works, even there.)
This definition also works with my definition of gender, which is basically what you tell people to consider you. If you tell people you're a man, then your gender is male and we use he/him/his pronouns. If you tell people you're a woman, then your gender is female and we use she/her/hers pronouns. If you tell people you're non-binary (or just to mind their own business) then your gender is non-binary (or whatever) and we use they/them/their(s) pronouns. Why does gender work this way? Respect. Don't be an asshole. Call people what they want to be called. (Neo-pronouns like xim/xer/etc., in my opinion, are not required, because they/them/their(s) is completely gender neutral and can be used regardless of a person's gender. In fact, if you don't what gender a person is, then just use they/them/their(s). That's what singular they is there for.)
