Hate to break it to you but MS has a pretty bad history of abusing their dominant market position!
Using your example of Minecraft, MS refused to update the game on Sony platforms unless Sony allowed Xbox Live sign-ij on PlayStation.
This is content that is submitted to and published by private business. It is not a public space where a citizen's words come directly out of their mouths.
I want to completely avoid giving out personal information (apart from an email address), and yeah I'd like to avoid Meta/Facebook too.
Is there a cross platform app that doesn't require a phone number, private end to end encryption, lets you share pics/video, allows video/audio chat, text messaging? Push notification? Bonus if it is easy enough for grandma to download and use.

Reprojection can solve that. I think the problem here is that Horizon is a solution in search of a problem. People already have efficient methods of communication. Horizon has to compete with texting and facetime and zoom. Good enough is good enough. The additional presence of Horizon is much more involving. People want to just send a message and get on with life or have a chat while doing other things. If people want an involving gathering, they will probably just play a game and voice chat at the same time.
Horizon is just overcomplicating everything.

I remember Portal 2 marking official Steam support on the PlayStation 3, with cross-play and cross-save.
These were the times Microsoft hated this idea.
PlayStation also had cross play with Final Fantasy 12 and many other titles with PC. Due to competitors being involved, MS did not want to join in.
It would take them a long time, and going from 1st place to 3rd place in console sales, to get into the idea of cross-play.
Luckily now everyone is mostly on the same page!
I remember playing a Ratchet & Clank mobile game called Ratchet & Clank Before the Nexus.
Their earlier mobile games must have shown it's worth it to make more of a commitment.
Including PlayStation, 8bitdo, and some other Bluetooth controllers.
For $100 I wouldn't want to be stuck with just that choice.

During covid lockdowns people were spending more. Now they've gone back to doing other things and are playing less.
New consoles have launched but supply constraints mean they're getting into few hands. People might be playing less because they can't get the latest and greatest.
