According to the God of all things edible [altonbrown.com], lactose intolerance is caused by the body failing to produce lactase, which is an enzyme used to break down lactose. This is more common than we cheeseeating folk normally would suspect -- 20% of European descendents, 80% of African descendents, and almost all Asian descendents stop making lactase at some point after early childhood.
As an aside, this might explain the lack of cheese or dairy in Asian dishes. Fans of Indian food will note an exception to this -- many Indian sauces include yogurt. As an aside to that, some of the smarmier but less informed fans of Thai food should note that coconut milk doesn't contain lactose. Anyway, the presence of yogurt in Indian dishes is an interesting counterexample to the inability of those unable to churn out lactase being unable to consume dairy without unpleasant digestive consequences.
Yogurt is produced by allowing a certain strain of bacteria to feast on sugar -- but not just any sugar. This bacteria happens to enjoy snacking on the lactose in milk, which produces lactic acid. This sets up the perfect environment for another strain of bacteria which continues to work on the proteins involved, causing them to coagulate and form a gelatenous, slightly tangy product that no longer includes anything which might be otherwise be hostile to the lactase-free digestive tract.
This process can be easily reproduced at home using store-bought plain yogurt to start. It can be used as a base for many salad dressings, Asian sauces, spreads, or even a cream cheese substitute.

I cheddar to think about the minds behind this poll. They obviously aren't too Swiss.
There were other cheese options, but they were all a-brie-viated.
These choices are beyond awful; they're actually feta-id. In fact, these poll choice were deliberately designed to get our goat...cheese.
They were thinking of adding string cheese to the poll, but they were afraid it would cause an incident.

Once a year, Costco also carries a five-year old Sargento Reserve Extra Sharp Cheddar in two-pound blocks for a similar price, which is really top-notch.
Despite what some cheese experts will tell you, a refrigerator is close enough to a cave to continue to improve a good wax-encased aged cheddar for several years. I suggest buying several blocks of Tillanook or Sargento and squirreling them away in the darkest reaches of your fridge. The last one will be several years older and even better by the time you get to it. If you keep buying a few blocks every year and only eating the older ones, you can always have a 6-10 year old excellent cheddar available for a mere $4/lb.
Another fabulous deal on a very good (though not quite up to Sargento or Tillanook standards) cheese is the Black Diamond Extra Sharp cheddar now sold under Kroger's "Private Selection" label in the standard cheese section (not the Deli) of Kroger's. An exceptional value for a standard grocery.
If you want something even better, there are numerous superior aged farmhouse American and Irish cheddars, ranging as old as 30 years, available for exorbitant sums at many serious local cheese shops. The best cheddar I've ever found for sale in the US or Europe (sorry, European Cheese Snobs) is Zingerman's 5-year raw Vermont Farmhouse Cheddar. [zingermans.com] At $25/lb, you could get a lot of 5-year Sargento Reserve for the same price, but if you're obsessive about cheese and/or well-off, you may find it worth your while to at least try a block. Prepare to be amazed.
I could go on about cheeses forever, but I'll restrict myself to good deals on Cheddar to avoid a long-post penalty. I'll just end with two excellent places to buy cheese in the Cleveland area, for you unlucky few who find yourselves here:

Unless there's another place/manufacturer I'm not aware of, the cheese you're referring to is properly called Tillamook [tillamookcheese.com] and is named after the county in Oregon in which the factory is located.
I highly recommend a visit to the factory if you happen to be in Northwest Oregon and are into cheese or other tasty dairy products (they make incredible ice cream too!). Last time there I almost passed out from all the cheese curd they let you eat for free.
