I would love to have a NAS with gigabit to send all of this too, but I would probably need more than a TB because that doesn't leave much room for the future.

My Ubuntu server has a TB and just acts as a file (and print) server, serving up my collection of movies (I'm slowly ripping my DVD collection) to my Mac mini, which is hooked up to a 32" LCD TV. I found that I needed 100Mbps at a minimum - 802.11g just didn't have enough grunt to stream movies without regular drop-outs
