totally agree.
The best editing software for equations I've ever seen is latex, and I suspect it's still too slow for taking notes in class.
There used to be these crazy pens that could capture notes (and doodles) to image files... But it'd probrably be easier just to scan them later, as it'd give you a chance to review them anyway.
