I guess I'm pushing old but I'm far from a boomer. And I definitely have a liking for linear TV, although I also use Kodi and streaming services. I don't think I'll ever lose that.
Sometimes I just like to stick the small TV on in the kitchen/dining room and not have to spend too much time picking what to watch. Also since its really background and I'm probably going to be going in and out, I don't want to watch something I care about.
Unless there's a big shift in steaming services I don't think they will ever scratch that itch for a few reasons. They are too US centric; its all too serious and 'big'; there just isn't enough low-brow local content; even if they created 'linear channels', like playlists or something, it would all be too focused (like a Mythbuster channel, or a true crime channel). I don't mind the odd American show coming on (when its background), but I like a bit of parochial-ness. I like it to feel like my culture, not like I'm living in someone else's country. And I don't just want to watch random episodes of the same shows.
Thinking about it, what gets lost is each regions/countries TV culture - which from my experience of USA v UK linear TV can be very different beasts. And what also gets lost is just finding things you'd never watch if you have unlimited choice, like an old documentary about fishing life in the Orkney Islands, or an afternoon drama about an old woman who misses her family, weird, local gameshows - random shit :)
