Ok, this is a little different than a lot of the stuff I post. I usually only put up the recipes for loaf bread. This time you get waffles.

I like waffles, but I have to be in the mood for them. This evening was one of those occasions. So, I decided to experiment a bit and I created a recipe for Oatmeal & Whole Wheat Waffles, working from a basic recipe I had. I made some substantial changes and came up with a greate recipe that will see more frequent use in our kitchen.

Recipe first, notes follow.

Oatmeal & Whole Wheat Waffles

  • 2 cups stone-ground whole wheat flour
  • 1/4 cup milled flaxseed
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 3 eggs
  • 2 tablespoons vegetable oil
  • 2 tablespoons honey
  • 1 cup uncooked rolled oats

Combine flour, flaxseed, baking powder, and salt in a 2-quart mixing bowl. Add in milk, eggs, vegetable oil and honey. Mix until mostly smooth, then stir in rolled oats.

Pour by ladlefulls onto lightly oiled hot waffle iron and allow to cook to desired darkness.

Makes 10-12 4" waffles.

NOTES:

  1. These have a really good texture. If you like the texture of whole-grain breads, you'll probably like these.
  2. If you use fine-grind whole wheat flour, drop the measure by 1/2 cup.
  3. The flaxseed adds some good nutritional value. ;-) Did not seem to change the flavor too much.
  4. The picture shows the waffles to be unevenly cooked and dark in the middle. Such is the way of my waffle maker. I did not burn them, though, so it's all good.
  5. These are quite filling. Chase with a glass of milk and you're probably done after 2-3.

  • Is the flaxseed necessary? That's the only ingredient we don't have, and I'd love to surprise the family with this Saturday morning;-)
    • No, the flaxseed is not necessary. I had some and I wanted to see what effect they would have. Nutritionally, they made a difference. Taste-wise, they probably didn't make any difference.
